Sage Ridge Cabernet Sauvignon

The Adversity Cellars Sage Ridge Cabernet Sauvignon is a pure mountain wine. It has a raw, primal quality that is absolutely intoxicating. As you would expect from a Mountain Vineyard it has a fabulous tannin profile, but the wines acidity gives it amazing drive and focus. The fruit flavors here are a darker fruit profile than on the Erba Cabernet Sauvignon. Here you get cassis and blackberry that wash away any tannin build up giving the wine a crazy long finish. As she opens up, the mid palate becomes very plush and the aromatics begin to show hints of tobacco and cedar. This is a wine that won’t let go easily.
