The inaugural 2018 vintage is a perfect balance of power and sophistication and provided Bill with a great opportunity to lean into an elegant styling of the Atlas Peak Cabernet Sauvignon. Its bouquet conjures aromas of dusty mocha, fresh brewed coffee, violets, blackberries, and caramel. Upon first sip, the senses are seduced with intense black fruits like blackberry, plum, and cassis that intertwine with hints of cocoa nibs, black tea, and tobacco which provide an ample backbone for this magnificent bottling.

More about the wine

The two clones from the vineyard were picked and made as separate lots. Fruit was de-stemmed and then cold soaked at 45F for 5 days. Natural ferment started after 5 days so they warmed the tanks up and added PN specific yeast. Fermentation lasted another 5 days, before they pressed the wine off skins.
